
'This frankie is stuffed with potato mixture, spicy noodles and served. Enjoy the popular street food of Mumbai in your kitchen. STREET STYLE NOODLE FRANKIE Ingredients 2 medium potatoes, boiled, peeled and mashed 2 cups boiled noodles 4 ready-made refined flour rotis 4 tbsps oil + for drizzling ½ tsp red chilli powder ¼ tsp turmeric powder Salt to taste 2 tbsps chopped fresh coriander leaves 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 1-2 green chillies, slit 2 spring onions, chopped with the greens 1½ cups shredded cabbage 1 medium green capsicum, cut into thin strips 2 tbsps schezwan chutney + for applying + to serve 1 tbsp red chilli sauce ½ tbsp soy sauce 1 tsp vinegar Chopped onion for sprinkling Frankie masala for sprinkling Processed cheese as required Method 1. Heat 2 tbsps oil in a non-stick pan. Add red chilli powder and turmeric powder and sauté for a few seconds. 2. Add boiled potatoes and mix till well combined. Add salt and coriander leaves and mix well. Set aside in a bowl. 3. To make the noodles, heat remaining oil in the same non-stick pan. Add garlic, ginger and green chillies and sauté well. 4. Add the spring onion whites and sauté for a minute. Add cabbage and green capsicum and sauté for 1-2 minutes. 5. Add schezwan chutney and mix well. Add the noodles and sauté till well combined. 6. Add red chilli sauce, soy sauce, and salt and mix till well combined. 7. Add vinegar, mix and cook for a few seconds. Add the spring onion greens and mix well. 8. To make the Frankie, heat a non-stick tawa. Place a ready-made refined flour roti and cook for 1 minute. Flip and drizzle a little oil and continue to cook for 1 minute. Apply a portion of the potato mixture and spread it in the centre. Sprinkle some chopped onion and sprinkle some Frankie masala. Add a portion of the noodles in the centre and grate some processed cheese on top. Roll it into a Frankie. 10. Heat a non-stick tawa. Drizzle a little oil and place the Frankie on it and cook for 1-2 minutes. 11. Serve hot with schezwan chutney.
